Mango Salad
For two. You can also make the full recipe.
In a medium-sized glass bowl, combine
- zest of half a lime
- juice of half a lime
- 1/2 tbsp oil (not olive)
- 1 tsp sugar
- 1/8 tsp salt
- pinch of red pepper flakes
- a light grind of pepper
While that is marinating cut up
- 1 nice big red mango, ripish but not squishy, long thin strips. Or you can use a couple of little yellow Alphonsos.
- 1/2 red bell pepper, long thin strips
- 1/4 small red onion, thin slices
- 2 tbsp chopped basil
- 2 tbsp chopped cilantro
Combine everything in the bowl, shortly before eating. Top with
- chopped peanuts
